Vegan food review ep 2: Frozen durian

Hola everyone!

OMG! Durian! I love durian so much. I know a lot of peple hate the smell and taste of it, and believe me, i know how you feel. I used to HATE durian. But when i moved to The Philippines, my mom was always trying to get me to eat some durian. I hated it. But then something changed when all of off the blue, i asked if i could taste some more, and then more, and more! I got addicted to it!
It only took me like 12 years before i finally liked durian. So don't give up on durian just yet. Just try eating maybe a spoon of it, once in a while, and then eventually you might fall in love...haha..

So today i'm reviewing frozen durian, which i got from a Chinese store near the Copenhagen station. My mom and i were so happy that Denmark has some durian that you can buy. Because when we moved to Denmark, durian was one of the foods i really missed. Now, we finally can have some. But it's not as good as the fresh Filipino durian, of course.

But i would really recommend you to try some frozen durian, especially if you don't like the smell. It's not as smelly. Also frozen durian tastes like...ICE CREAM! Also i also recommend for you to try to blend some durian with some banana, to camouflage the smell.

Please do try some frozen durian. You'll love it!
And all you pinoy people here in Denmark, we can still eat durian even in Denmark! Whoohoo!!

Hello Everyone!

So i decided to start a new series where i review vegan food i find in the different grocery stores that i go to. I haven't found any blog like that where they review vegan food from ordinary grocery stores.

For this first episode i am reviewing my favorite vegan junk food from back in the day when i lived in The Philippines.  I used to always eat this especially when i was sick or felt sad. Such a yummy comfort food.

I stumbled across this while i was looking in a mini grocery pinoy store in Copenhagen called "Gulay at prutas". I was so excited to be reunited! I haven't eaten this since 5-6 years ago.

Definitely recommend you squeeze some lemon or calamansi on top. This will make the noodles taste even more amazing!

It's so cool that this is vegan, because it tastes like Chicken! SO yummy!!

Sadly it's not gluten free, so i really shouldn't be eating this, since i'm sensitive to gluten. But i just had to taste it again, and it tastes amazing still! But i'm not buying it again, not worth the rashes.

But if you are not gluten sensitive then i highly recommend this pansit canton to you. Also check out Prutas at Gulay in Copenhagen near Tivoli. They have tons of Filipino food.

I didn't have any pepper which was sad. I think pepper would fit perfectly.

Dancing with the stars (danish version) aka Vild med dans episode 3 live show

Hello everyone!!

So i just came home from a very exciting night. As you can see from the title, i went to the Vild med dans live show today, and i had a blast! 
It was my 2nd time going to the show. The 1st time i went there (about 3 years ago) we went to watch the rehearsal, today we went to watch the live show. I loved it! If you ever have the chance to watch VMD i would suggest going to the live show, since there's more energy from the dancers and they really give it their all. But if you want to see some bloopers then watch the rehearsals.

VMD is filmed in a place called Metronome studios in Copenhagen. The stage is pretty small and the seating area is pretty tight. haha. My feet hurt really bad after the show. We were seated at the front, just about 10cm away from some of the dancers family members. So if you are claustrophobic, you might consider going for the seats at the back were you will have lots more space.



There was this one guy (the guy in a black t-shirt in the picture above) who was entertaining the audience in the commercial breaks, and before & after the show. He's such a funny guy. You won't be bored that's for sure! He also would give signs when to laugh and clap. 


What i loved a lot was that there was live music. The three main singers were amazing. Such beautiful voices. I was watching them a lot during the show. They seemed to have fun.


I don't really watch danish tv show i didn't really know that many of the dancers, but i still has lots of fun, but i didn't have a fan girl moment, like some in the audience...haha.
I really loved Silas, Jenna Bagge and Thomas.

Lastly here's a picture of what i wore. I decided to go with a black and white theme. All of my clothing are from H&M.

All in all i had an amazing night and feel very lucky to have been able to watch the show live. I know lots of people would love to watch the show live and i wish the studio could be bigger so more people could watch.

So this copycat cooking episode is a bit of a fail. The only ingredients that i had was frozen blueberries and strawberry & blueberry soy yogurt. But it was still tasty.

I let it freeze in the freezer overnight.

It was really tasty and creamy, so i would definitely do this again.

So who doesn't LOVE tacos, right? I have always loved tacos, definitely my favorite food. I always eat homemade tacos on my birthdays, and since mine is coming up in a few weeks, i though i should try a new recipe out. This recipe is awesome, and extremely yummy!

For the taco "meat" i used red onion instead of white. I love red onions, and they make you cry a lot less!

I used my favorite taco mix from Mex & co and it smells like heaven. I love it so much that i put 2 tbsp of it in.

I didn't have cilantro so i used my favorite herb, parsley instead.

The taco "meat" was my favorite part, it tastes so good!

Guys you have to try this recipe out, it will change you life!! So good!

I hope you all had a wonderful summer. Denmark is starting to get into the fall season already... But it does't matter, i love fall!

Celebrating Autumn, i decided to make this yummy caramel apple sandwich. I really am missing gluten, so i thought i should find a gluten free sandwich recipe, and i found this one!

I was so excited to make this, because Emily's recipe looked so good! But i didn't want to make mine with too much fat so i doubled the caramel, and made my own almond butter. To make the butter, i just blended soaked almonds with water and some vegan butter.

Also i didn't blend the caramel since mine isn't strong enough, i just used a fork to mash it.

When i was done, i was super excited to try it, and OMG it tasted like HEAVEN!
The almond butter tasted like whipped cream.
I definitely recommend this recipe to you guys.

Copycat Cooking ep 11: Vegan pavlova

I have always loved Pavlova, ever since my mom made it 5 years ago. But since i'm vegan now, i haven't had it for a very long time.

I really wanted to buy vegan meringue but we couldn't find any here in Denmark. Maybe i'll make some in the future.

I used soy whipped cream for me and rice whipped cream for mom, since she's allergic to soy.

While i was mixing the whipped cream i added a bit of sugar and vanilla powder to add more taste.

I also decided to sprinkle some dark chocolate on top, which i didn't enjoy that much. Next time i won't be adding the chocolate. 

I loved the taste of the berries and cream, but it was a bit underwhelming. So i would recommend buying of making some meringue, since it will taste a lot better!

So a few weeks ago, i was craving sweet sauce so much! I know right, weird craving... But i couldn't help it. I really wanted it, even though my tummy doesn't react very well when i eat a lot of it.

So i researched on Pinterest and saw this yummy picture Allyson from allysonkramer.com of these nuggets. I fell in love! Looked so yummy i decided to make some. And since i was craving sweet sauce, this recipe was perfect. 

I did not use an oven to make these, since we are trying not to use too much heat, to save money & the planet. I decided to "fry" them instead. I didn't really fry them, i just heated them on the stove.

So since i didn't pour the sauce on top, i decided to just heat the sauce and then when the nuggets were done i poured the sauce on top.

Instead on using chick'n flavored bouillon i used veggie bouillon instead.

Also, i didn't have different rice varieties, so i only used basmati rice. 

The sauce was amazingly yummy! And this recipe was so easy and so much fun to make. My cravings were definitely satisfied.

The only problem i had with this recipe was that the sauce was a little high in fat. So my tummy did hurt the next day. If i make this again, i might not add the vegan butter. 

I hope you guys try this recipe out!

I got this easy, fun, cheap & healthy recipe for you guys, perfect for summer time!
So i have started to watch StilaBabe09 on Youtube recently, and i adore her channel. I love the way she edits and films her videos too. It's always fun and bright. 
Anyways, so i watched her "Healthy Snacks for Spring/Summer: DIY Shaved Ice, Green Juice, & more!"
video, and i loved the shaved ice. 

So i decided to try it out. I din't use honey like Meredith did, i used maple syrup instead, to make it vegan.

I left the mixture overnight in the freezer, and the next day when i tasted it, i was so surprised on how yummy it was. It was amazingly good! Way better than the fake shaved ice you can get from the grocery store, which are filled with chemicals and coloring. This is the perfect dessert for the summer time, and it's guilt free!

So i definitely recommend this recipe to you guys!
And check out Meredith, she has some amazing DIY videos.

I got a pretty cool recipe to show you guys today. Since i went gluten free due to gluten sensitivities, i haven't eaten pasta. And i miss it a lot, especially since it was my favorite food. We occasionally buy gluten free pasta, but it's just so expensive... 

So this recipe is perfect for all you pasta lovers out there. But i will have to warn you, this recipe is pretty high in fat. I'm pretty sensitive to fat, so i did get a reaction to this recipe the day later. Tummy aches and eczema. So if you are sensitive to fats i advice you don't add the pine nuts or sun dried tomatoes. A bit of fat is okay, so keep the avocado in.

The reason my zucchini pasta is a bit wide, is because i don't have a julienne peeler. I only used a normal peeler, which is fine too.

I decided to triple the recipe, since my mom was convinced this would be a yummy one. I just didn't realize it was so high in fat, so i wasn't able to eat more than one meal. But it was a yummy meal. I really did love it, so it was really too bad i couldn't eat more.

While i was peeling the zucchini i realized the juice makes your skin super dry. Wondered if it would be a good face mask...

I tried the pine nuts before i added it to the salad, and it tastes like soap... haha. but once i mixed it with the other ingredients, it was nice.

Other than the fact that i had tummy aches the next day from this recipe, i really did like it. It was so yummy and it actually had a hint of chicken in it.

Try this recipe out guys! So good!

So i made scones for the first time. I made these a few weeks ago for my mom, since it was mother's day.
She loves scones and chocolate so this is perfect. And i used to love the chocolate scones in 7/11, but since i went vegan and especially gluten free my scones cravings haven't gotten satisfied. 

So now i decided to make vegan, gluten free and stove scones! I saw this recipe on Pinterest from Katie ( VeggieAndTheBeast ), and i fell in love. Her recipe isn't gluten free though. 

I was so excited to make these. But also nervous, since i was making gluten free scones.

Before i went grocery shopping for this recipe i already decided to double the recipe. We finish desserts so fast in out household, haha...

It took me 2 hours and 30 minutes to make these yummy scones, but definitely worth it!

These are perfect to make for your mom or for valentines day. They definitely have a romantic feel to them.

I used rice milk, since almond milk is a little bit too expensive.

I also didn't use apple cider vinegar, i used regular vinegar instead. A lot cheaper.

Finally we have found the best gluten free flour here in Denmark, which is what i used for this recipe. Gluten free products are finally arriving in this little country.

I used a bit more sugar to make it sweeter. I used 2 cups of sugar. I love sugar!

Didn't use almond extract. Mom told me it's fake, and i don't want to eat fake food! I used more almonds instead.

While i was cooking, the whole kitchen started to smell so good! Smelled like strawberries and honey.

So instead of putting them in the oven i decided to bake them in a pan. And i did flip them just like pancakes. They turned out great! And you can't even taste that they are gluten free.
So much fun to decorate as well.

Definitely recommend this recipe to you guys. It's amazing!!!

Perfect for school lunch or for a picnic.

My mom loved these too.

Copycat Cooking ep 6: Secret Beefless Finger Licking Stew

I absolutely love this recipe, perfect for dinner time. It is super filling too! It took me a while to cook it (2 hours), but it was worth it. 

The recipe said to use meatless pieces, but since i could find any at the grocery store i just used fallafel balls instead. But if you are using fallafel too, add it once the stew is almost done, so it doesn't get mushy.

I also used yellow onions instead of white ones. I do not like to chop onions. And i have tried all of the tricks to stop my eyes from hurting. I've tried chewing gum, breathing through my mouth instead of my nose (works sometimes), but it always hurts! Maybe i should try those onion chopping glasses...

Also i didn't want to use wine, since i don't like alcohol so i just used water instead. I was going to use unsweetened grape juice but my grocery store didn't have any.

I LOVE the sauce, super yummy. I think it would work for pasta too.

This recipe is perfect with rice too!

Salads have never been my favorite, but after trying this recipe...I LOVE SALAD!
haha..
The dates give it the perfect sweetness, and the nuts give it the perfect crunch.
Sadly my grocery store didn't have any kale, so i used parsley instead. I love parsley. And it tasted so good.
My mom is allergic to raw almonds and some cooked ones, so i decided to use cashews instead. Cashews are the best nuts, i think.

I was so scarred making this salad though, because it was my first time making quinoa, but it was really easy to make, to my surprise.

Oh, before i forget, i got a tip for you guys for chopping onions. Open a window close to you, and only breath through your mouth. This will prevent or lessen the pain, and no tears!

I really did enjoy making the salad, it felt like painting, since there was so many steps. haha..I'm strange, i know.

The dessing was amazing too!

Copycat cooking ep 4: Vegan Chocolate Custard

mm...Chocolate.
I just love chocolate. And since i went vegan in 2011 i haven't had chocolate pudding/custard, and i started to miss it. I used to love to pour whip cream all over the pudding.
 
Finally i saw a lovely recipe on Veggieful.com and i didn't think this would work out...But i was wrong!
 
It tastes amazing. I think i would even triple the recipe next time that i'll make it.
It's super creamy, and tastes even better when it's cold.
 
The consistancy didn't turn out as good as Madioson's chocolate custard, though. Mine was a bit more on the liquidy side. Maybe it was because i used rice milk instead of soy milk. But it didn't matter, since it tasted so good.
 
Mom approved this recipe too. She was really shocked. She didn't think it would work. haha

Copycat cooking ep 3: Hot and Sweet Sesame Tofu

I am so excited to post this recipe, because this is probably the best recipe i have ever tried in my entire life!
Tofu has never really been my favorite and i haven't eaten it in a year or so, so i thought i should try it again.
I really thought this would be my first fail CopyCat Cooking recipe, but man was i wrong!

It took my about 1 hour and 30 minutes to make this recipe. I should of doubled the recipe though, because it only served barely 3 people.

So while the tofu was cooking i decided to take some notes on what i changed in the recipe. Here's my notes...

¤ A good tip is instead of mixing the cornstarch with the tofu in a bowl, like it says on the recipe, place some cornstarch on a plate and take one tofu cube at the time and roll it in the cornstarch. This will prevent the tofu breaking apart.

¤ I used maple syrup instead on honey, to make it vegan. =)

¤ I used extra virgin olive oil instead of sesame oil, since it's cheaper.

My mother absolutely loves this recipe. She said it tastes like pork, and that she loves the crunch. The sauce
is also her favorite, she says it tastes like Filipino food.

This dish is perfect for dinner time, and it tastes amazing and savory.

I'm back with another CopyCat Cooking recipe! This recipe is literally amazing!
So happy i found this recipe on Pinterest. When i read the ingredients on Veganyummines.com i was thinking, how will this even work?! Potatoes, carrots and nutritional yeast is basically all that you need.
I didn't even think this recipe would be good. 

While i was cooking,  i started to smell the cheesy smell from the nutritional yeast, and i got a bit more
confidence for this recipe. I even decided to double the recipe, since it didn't look like a lot.
When i was done, i was shocked on how easy this was to make. And i thought, if this tastes good, then this is the best recipe ever. And OH MY GOD it tasted AMAZING! Just like cheese, it even tasted like chicken a little bit. 
Easy and yummy...I love it.

My mom gives this recipe 5 stars, haha...

This recipe is perfect as a dip. I even added it on top of my pasta. You could also use this
on pizza, lasagna and mac & Cheese.

Definitely recommend you guys to try this.

Long time no see... Sorry about that. Been super busy with work and i have been trying to dedicate all of my free time to making my Youtube videos. But recently i've missed writing on this blog. So i decided to try to figure out how i can add blogging to my schedule.
While i was cooking the other i day i thought, why not post a short blog post about once a week showing you guys 1 cooking experiment.

Once a week i cook a special recipe from Pinterest to my lovely mom. Since she usually is the one cooking,
thought it was time to me to help out in the kitchen a bit more. So once a week i search on Pinterest for yummy vegan meals.

This series ( Copycat cooking ) is going to be about me trying out some recipes from Pinterest and showing the results to you guys. And i promise i will probably fail...a lot! Because i'm not the best chef...haha..
But that will be fun, to show you guys the good and bad results.

So this recipe i got from FatFreeVegan .  When i saw the recipe i knew it would probably be a bit hard for me to make, since it requires me to actually cook with boiling water ( kind of hate boiling water, since i always burn myself, which i did making this recipe). But i wanted to see if i could make it.
And i have to tell you this recipe does take some time, it took me about 3-4 hours to make. Because you have to soften the cabbage wraps individually.

Once i was done i gave a roll to my mom first. She didn't like it that much. She said she liked the taste, but that the cabbage was a bit to hard for her to chew. So if you guys will make this recipe remember to take your time boiling the cabbage until it gets really soft.
But i really did like the taste of the tomato sauce! But probably not making this recipe again, since it took a lot of time...
